Dia da saudade, broa de milho e centeio e eliminacão de sacos de pão *Saudade day, corn and rye flour bread and more bread bags*

E porque hoje, 30 de Janeiro, é a celebração do Dia da Saudade (celebrado no Brasil, pelo menos), decidi escrever sobre a fantástica e tradicional broa de milho que eu costumava comer, feita pela minha avó, em Portugal. E que tenho tantas saudades!!



  • Desabafo:  

Estou farta de tanto saco e saquinho e saqueta e embalagem de plástico cada vez que vou ao supermercado! Ora é o pão, ou a alface, ou a fruta ou até a cabeça de bróculos com papel aderente à volta!! Em parte é mea culpa, não tenho ido ao mercado e como tal no supermercado é o que calha, por mais que tente escolher produtos locais, orgânicos, volta e meia chego a casa com as compras e fico meia hora a desembrulhar e a deitar para o lixo embalagens de plástico, que não servem para mais nada... pior que os presentes de Natal, chiça!! Mas o que me tem chateado mais ultimamente é o pão. Por cá existe um pão de centeio que adoro, que vem em embalagens de 8 fatias. Ora, está-se mesmo a ver que cada semana é pelo menos um saco destes a ir para o lixo.. mesmo que os tente aproveitar para outras coisas não dá, fico com uma acumulação de sacos de plástico, no mínimo, ridícula!! E então, por estar com saudades de broa de milho e estar já a pensar em fazer tofu com broa (e como cá não há broa!!), tudo boas razões para fazer eu a minha, decidi fazer em casa broa de milho! Claro que com uma adaptação, além da farinha de milho leva também farinha de centeio (tradicionalmente seria farinha de trigo) e devo dizer que o resultado final é FABULÁSTICO!!!


 
Confesso que não é tão boa como o que a minha avó fazia, que cultivava o milho, moía para fazer a farinha, num moinho de água, amassava e cozia em forno de lenha - saudades... Mas mesmo assim, fiquei fã do sabor, das saudades aliviadas, das experiências culinárias futuras e claro, da introdução da farinha de centeio, que faz o pão um pouco mais saudável e com um sabor óptimo! E a cereja no topo do bolo (neste caso, da broa!) é que assim evito todos os sacos e saquinhos e saquetas e embalagens de plástico!

Objectivo #DesperdícioZero atingido!!!

Aos poucos o desperdício vai sendo menos!

 Because today, 30th of January, is Saudade Day celebration (celebrated in Brazil, at least), I decided to write about an amazing traditional corn bread I used to eat, made by my grandmother, back in Portugal. And that I miss so much!!


  • Talking out loud:  

I am sick and tired of all the bags and little bags and containers and whatever each time I go to the supermarket! It is either the bread, the lettuce, or the fruit or even a brocolli head comes with film surrounding it!! In a way, it's mea culpa, I haven't been going to the local market and in the supermarket I have no choice, I try to get local, organic products, and most of the time I get home and spend at least half an hour unwrapping and throwing to the garbage plastic films and containers, which are totally useless... it is worse than X-mas wrappings, damn it!! But what has really been itching me is the bread. In this forsaken land there's a rye bread I love, which come in 8 slices tiny plastic bag. Well, obviously, each week is at least one plastic bag that goes to waste.. and even if I try to re-use them in some other thing they are too small, so I tend to accumulate a ridiculous amount of plastic bags!! So, because I miss corn bread and also I am already thinking about cooking tofu with it (and since this type of bread does not exist in this forsaken land!!), all good reasons for me to bake one, I decided to bake an homemade corn bread! Of course I did a tiny adaptation, besides the corn flour it also takes rye flour (tradiccionally it would be wheat flour) and I must say that the final result is just HOLY AMAZING!!!


 
I confess that it is not as good as the one my grandmother used to bake, she would plant the corn, did the flour in a watermill, knead the dough and bake it in a wood oven - I miss it... But still, I am a big fan of the flavour, of the relieved longing for it, of the future culinary experiments and of course, of the introduction of the rye flour, which makes the bread a little bit more healthy and with a great flavour! And the cherry on top of the cake (in this case, the corn bread!) is that this way I avoid all the bags and little bags and containers and whatever!

Objective #ZeroWaste accomplished!!!

Little by little, the waste is less and less!

Cupcake com sabor (ambíguo)... *Cupcake (ambiguous) flavour...*

Ontem foi um desastre de cupcakes!!! Uma confusão!! Qualquer coisa de horrível!! Terrível, horrível, assustador!!... Não faço ideia porquê, mas estava horrível, uma porcaria, não se podia comer!!! Vou ter de os deitar no lixo... que desperdício...

...eu passo a explicar *inspirafundo* dois dias atrás foi a comemoração do "dia do bolo de chocolate", como tal, fiquei com vontade de comer bolo de chocolate. Afinal, porque não? Acabei por fazer uma receita simples de cupcakes que, achava eu, ia acalmar os meus desejos por chocolate amargo em cupcakes fabulosos! Errr, não!!! E ainda fiz outra de cupcakes de chá verde pistachio, só porque me apetecia experimentar qualquer coisa nova (felizmente...o tempo não foi todo perdido).

  • Mas então foi assim que tudo se passou:

Eu tinha uma receita de cupcakes, razoavelmente simples, que inclua cacau em pó e farinha, entre outras coisas. Nada do outro mundo, e só alterei a farinha por farinha de arroz e usei cacau orgânico, de comércio justo, o mesmo que tenho sempre usado (com sucesso) nas minhas outras experiências culinárias! Misturei todos os ingredientes, meti os cupcakes no forno e cresceram e colapsaram um pouco no meio, o que era sinal de ter um interior meio mole e suave, exactamente aquilo que eu queria! Então depois de prontos, tirei os cupcakes do forno, deixei arrefecer um pouco e dei uma dentada!!


Não estão lindos? Yum yum!

E logo a seguir à primeira dentada, OMG, a textura era simplesmente perfeita, suave, fofa, macia, e tudo o resto e sem ser demasiado doce, que eu adoro. Mas lá estava!! Imediatamente a seguir à primeira dentada, depois de engolir, um sabor terrívelmente amargo! Mesmo, mesmo amargo!!! Fui a correr para a torneira da cozinha, para beber água, comer qualquer coisa doce ou um rebuçado e tirar aquele sabor horrível da minha boca, yuk!! Porquê???? Eu não percebia o porquê.. e então lembrei-me que eu também tinha feito os cupcakes de chá verde e pistachio com a mesma farinha de arroz. Será que também estavam horríveis, intragáveis? Eu estava com medo de descobrir que eles estavam tão amargos como os de chocolate, mas foi uma (boa) surpresa, o sabor era óptimo. A textura era um pouco pesada, mas mesmo assim com um sabor suave e o toque do pistacho foi com certeza um ponto a favor!!"

Resumindo, as experiências com os cupcakes foram metade bem sucedidas, acho que no fundo não me posso queixar, os cupcakes de chá verde e pistachio são bastante bons, mas com os cupcakes de chocolate foi um desapontamento muito grande... Tenho de resolver isto, tenho de tentar novamente com farinha de trigo em vez de farinha de arroz e ver o resultado, vai ser uma experiência de tentativa-erro.

E é tudo! O meu objectivo de #desperdíciozero não vai lá muito bem... e é uma pena que a minha ideia de compostagem doméstica ainda não começou! Eu não tenho como re-utilizar os meus (horrivelmente amargos) cupcakes. Bolas!!

Novo dia, 2a tentativa!!

  • Porque não podia simplesmente deitar fora os cupcakes de chocolate e ficar com vontade de comer mais!



Hmmm, ficaram óptimos!!!



Mas então o que é que mudou? Acabei por manter a farinha de arroz e devido a uma pesquisa rápida no Google percebi que o tinha dado o sabor amargo aos cupcakes tinha sido o bicarbonato de sódio, claramente enganei-me na quantidade e os outros ingredientes não foram suficientes para neutralizar o sabor amargo no final. Resultado, aprendi, vou tentar não usar mais o bicarbonato de sódio e fico só com o fermento :) O bicarbonato vou usar para limpezas, já que também descobri 51 usos diferentes para o bicarbonato de sódio que eu não fazia ideia!!

Yesterday was a cupcake flavour disaster!!! A mess!! Something horrible!! Terrible, terrible, terrible!!... I have no idea why, but it was horrible, awful, crap!!! I believe I will have to throw them to the garbage bin... what a waste...

...but I explain *sigh* two days ago was "Chocolate cake day" celebration, so I felt like eating a chocolate cake. After all, why not? I ended up with a cupcakes recipe that I though would ease my desire for dark chocolate-awesome-cupcakes! Errr, nope!!! And another green tea-pistachio cupcakes, just because I wanted to try something new (luckily...I did not waste my entire time).

  • But here is how it went:

I had a simple recipe for chocolate cupcakes, which included cocoa powder and flour, among other things. No big deal here, so I thought about using rice flour and organic, fairtrade cocoa powder, the one I have been using (successfully) in my other baking experiments! So I mixed the ingredients, baked the dough, the cupcakes grew and the middle collapsed just a bit, indicating a soft and a bit mushy middle center, which would be just what I was expecting! So after baking, I took the cupcakes out of the oven, let them cool a bit and took a bite!!


See how gorgeous they look? Yum yum!

And after that first bite, OMG, the texture was just perfect, soft, fluffy, smooth, you name it and a not so sweet flavour, which I like. And there it was!! After the first bite, after swallowing it, the bitter aftertaste! The actual, very strong bitter aftertaste!!! I had to run for water, some candy, something sweet, just to take this taste out of my mouth, yuk!! Why???? I could not understand why.. and then I remembered that I also did the green tea-pistachio cupcakes with the same rice flour. Would they be horrible as well? I was afraid of discovering that they were as bitter as the chocolate cupcakes, but it was surprising, they tasted really good. The texture was a bit dense, but still light in flavour and the pistachio touch is definitely a plus!!"

So the baking experiments were half successful, I guess I cannot complain, the green tea and pistachio cupcakes are quite good, but it is a huge disappointment with the chocolate cupcakes... I have to fix this, I will try with all-purpose flour instead of rice flour and check, so it will be trial and error experiment.

So that's all! My #zerowaste objective is not going well... and too bad my composting idea has not yet started! I have no way to re-use my (awful-bittertaste) cupcakes. Damn!!

New day, 2nd try!!

  • Come on, I could not possibly throw the other cocoa cupcakes to the garbage and drooling just thinking about them and wanting to eat more!


Hmmm, they turned out great!!!



But then, at the end, what changed? I ended up keeping the rice flour and due to a quick Google search I discovered that the bitter aftertaste of the cocoa cupcakes was from the baking soda, clearly I mistaken the needed quantity and add too much, so the other ingredients were not enough to neutralize that bitter aftertaste. Result of it all, I learned, I will try not to use the baking soda again and I will keep just the baking powder :) The baking soda will be just for cleaning, since I also discovered that baking soda can be used in 51 different ways which I had no idea!!

Dia do bolo de chocolate (EUA) *Chocolate cake day (USA)*

Aparentemente hoje é o dia do bolo de chocolate! Pelo menos nos EUA, mas fico feliz por o celebrar também :) Qualquer celebração que envolva chocolate nunca é demais!! Portanto vou partilhar uma delícia que fiz no Sábado passado, para um jantar em casa de uma amiga! Bolo de abóbora (manteiga) com cacau (a receita foi adaptada daqui, e alterei as especiarias e claro, fiz a versão vegan!!). O bolo ficou extraordinariamente bom, ou tanto, que quase que desapareceu em minutos! De qualquer das formas, planeio fazer outro depressa (já que só comi uma fatia). É um bolo leve, quase com uma textura de veludo, que vem do puré de manteiga e o sabor do cacau fica excelente!


Não está lindo?!! ;)

E claro, o que sobrou do puré de abóbora, foi aproveitado para fazer fajitas de feijão e abóbora e ainda um bocado foi para (outra sopa) soup!! Torrei as sementes no forno, temperadas com sal e estavam tão saborosas que tive de esconder o frasco para não comer tudo de uma só vez!!


Enfim, aproveitem o vosso dia do bolo de chocolate, comam um bolo de chocolate, um batido de chocolate ou uma tablete de chocolate! Comam sem arrependimentos e sejam felizes!!!

So, apparently today is chocolate cake day! At least in the USA, but I am happy celebrating it too :) Any celebration including chocolate is always great!! So I will share something I did last Saturday, for a dinner party! A butternut squash and cacao cake (adapted from here, meaning that I changed the spices and made it vegan!!). The cake turned out extremely good, so much, that was almost gone in a few minutes! Anyway, I plan to make another one soon (since I had only one slice). It is a very light cake, the butternut squash gives it a velvet-like texture and the cacao is just amazing!


Doesn't it look marvelous?!! ;)

And it the leftovers of the butternut squash puree, I did bean-butternut squash-fajitas and a piece went for (another) soup!! The seeds I roasted in oven with salt and they were so delicious that I had to hide the jar so I wouldn't eat them in one go!!


So, enjoy your chocolate day, have a chocolate cake, a chocolate smoothie or a chocolate bar! Eat it no regrets and feel happy!!!

Sopas & O resultado do Processo de Conservação: Fase 1 e Fase 2 iniciadas *Soups & The outcome of "Preservation process: Iniciated Phase 1 and Phase 2"*

"Ora bem, estou de partida para Portugal, já a contar as horas. O meu frigorífico está quase vazio, o que quer dizer que consegui comer a comida toda que cozinhei depois do congelador ter avariado e também a que já tinha no frigorífico! Estou contente por isso e por ir passar o Natal com a minha família. Em 2015 vai haver mais blog, esperemos que com muito menos desperdício e mais receitas saudáveis, que consigam sobreviver à falta do congelador.

Deixei os pimentos a secarem na janela, para fazer conserva e vou deixar a abóbora na mesa, porque aparentemente consegue aguentar 3 meses... só não sei que "idade tinha" quando a comprei :) 

 

Espero chegar e não ter bolores ou bichinhos pela casa. Além de chato, seria um desperdício de comida."

Isto foi o que escrevi à 55 dias atrás, no dia 28 de Novembro, véspera de viajar. Tinha no frigorífico ainda um resto de lasanha e puré, que iria dar para o jantar desse dia e almoço do próximo. O objectivo de desligar o frigorífico iria ser alcançado!!

  • E foi!!! Fui embora, depois de conseguir cozinhar e comer toda a comida que tinha no congelador, sem deitar comida fora e desperdiçar.

Ora bem, agora de volta vi que os pimentos estavam bem secos, pendurados na janela e a abóbora aguentou este tempo todo! Resolvi logo fazer azeite aromatizado e enfiei os pimentos num frasco de vidro (re-aproveitamento de umas conservas que comprei) e vou deixá-lo com azeite, bem fechado, no fundo do armário, no escuro, durante cerca de 1 mês. Depois é só usá-lo para temperar cozinhados que precisem de um toque mais picante!



Relativamente à abóbora, uma parte já foi para a sopa e a outra parte irá para um bolo de abóbora e chocolate, que ainda vou fazer. Esta semana tem sido uma semana de sopas, consegui fazer sopa de cenoura, sopa de beterraba (que vai ser publicada aqui) e sopa de abóbora com a água que sobrou de fazer o arroz árabe :p

Além de que estas sopas, que têm um toque aveludado, porque adoro cremes, são feitas com legumes locais e muito saborosos. Levam poucos, mas bons ingredientes e temperos q.b. Ando tão viciada em sopas que lembrei-me de fazer 1 mês só de sopas, com uma sopa nova cada dia!

Ontem tive um óptimo acompanhamento à sopas de espinafres (que entretanto fiz, portanto, mais uma sopa para a contagem!). Uma amiga está a fazer a "semana vegetariana" e cozinhou comida a mais, então deu-me um pouco para o meu jantar! Adorei!!! Grão de bico estufado com courgete, bróculos, cenoura e figo, acompanhado de couscous. Tem um aspecto delicioso e o sabor estava óptimo!! Fico à espera da inspiração!!

"Well, I am off to Portugal, already counting the hours. My fridge is almost empty, which means I managed to eat all the food I cooked after the freezer broke and also what I still had in the fridge! I am happy for that and for spending x-mas with my family. In 2015 there will be more posts in the blog, let's hope with a lot less waste and more healthy recipes, without the need for freezer.

I left the peppers drying at the window, to preserve them and i will leave the butternut squash on the table, because apparently it can survive for 3 months... I just don't know "how old it was" when I bought it :) 
 

I hope to arrive without molds or little bugs in the house. Because, it would be not only annoying, but also a waste of food."

This is what I wrote 55 days ago, on the 28th of November, the day before of traveling. I had in the fridge, still, a lasagna leftover e mashed potatoes, which would be enough for dinner that day and lunch next day. The aim of turning off the fridge while I was gone would be reached!!


  • And it was, indeed!!! I left, after being able to cook and eat all the food I had in the freezer, without wasting or throw food to the garbage bin.

Well, now that I returned I saw that the peppers were completely dried, hanging on the window e the pumpkin was ok, survived this whole time! I decided to do spicy olive oil and I put the pepper inside a mason jar (re-using one I bought with pickles) and leave them in olive oil, tightly closed, at the back of the closed, in the dark, for an entire month. After that all I need to do is use in some spicy cooking to give a hot touch!


Regarding the butternut squash, a piece of it went straight to the soup and the other piece will be to bake a butternut squash and chocolate cake. This week has been a soup week, I managed to do a carrot soup, beetroot soup (which will be published here) and butternut squash soup with the leftover-water of cooking arabic rice :p

Besides that all these soups, that have a silky touch, because I just love them creamy, they are all made with local vegetables and very tasteful. Not too many, but good ingredients and spices to taste. I am so addicted to soups that I thought about doing a whole month of soups, one new soup each day!Let's wait for some inspiration!!

Yesterday I had a really great dish beside my spinach soup (so, another soup to add to the counting!). A friend of mine is doing a "vegetarian week" and cooked too much food, so she gave me a bit for my dinner! Just loved it!!! Stewed chickpea with courgette, broccoli, carrot and fig, with couscous. Sure it has a delicious look and the taste was wonderful!!

Resoluções de Ano Novo*New Year Resolutions*

Ano Novo... é como um botão de reiniciar à meia-noite e tudo começa do zero... é como uma página em branco num caderno novo... é como respirar pela 1ª vez... mas este ano não fiz grandes desejos, já fico contente se em 2015 acabar o Doutoramento, encontrar um trabalho porreiro e continuar a minha aventura (culinária) sem congelador!! Simples, vamos ver como corre :)

No entanto, tive uma experiência nova no final de 2014. O meu tio deu-me uma fruta vermelha "esquisita", em que o interior parece o interior do maracujá, mas é completamente vermelho por fora. Aparentemente, podia comer-se cru, e o sabor era bom, suave e um pouco parecido com maracujá :) "Googlei" e era tamarilho. Cresce em árvore e o meu tio até me disse que posso ter quantos tamarilhos eu quiser. Para experimentar, fiz um doce com eles, com um bocadinho de canela, cardamomo, açúcar mascavado e uma casca de limão orgânico (do Alentejo)! Tem um sabor suave e não muito forte, tenho de tentar com scones e talvez chá de jasmin. E agora tenho de pensar em novas e diferentes receitas.

Hoje, para começar de forma saudável o novo ano de 2015, fui ao mercado local, abastecer a despensa com tubérculos e legumes. Vou fazer sopas ricas em sabor e saudáveis ;) e ainda aprendi a entrançar as cebolas, com a ajuda da minha mãe :) Bonita decoração!!

New Year... it is like a reset button at midnight and everything starts over... it is like a blank page in a new notebook... it is like breathing for the first time... although this year I had no big wishes at midnight, I just wished 2015 to be better than 2014, so I will happy if I finish my PhD, find a nice job and continue my (cooking) journey without a freezer!! It sounds nice and simple to me, let's see how it turns out :)

Nevertheless, I had a new experience close to the end of 2014. My uncle gave me some kind of red "fruit", which the inside looked similar to passionfruit, but it was totally red on the outside. Apparently, it was ok to eat it raw, like that and the flavour was pleasant, a bit similar to passionfruit :) I googled it and it was tamarillo. It grows in a tree and my uncle told me he could give me as much as I wanted to. To try it, I did a jam with it, with a bit of cinnamon, cardamom, muscovado sugar and a bit of organic lemon (from Alentejo)! It tastes light and smooth, I have to try it scones and maybe jasmin tea. Now I need to think about different and totally new recipes.

So today, to start 2015 in an healthy mood, I went to the local farmers market, stock up with tubbers and veggies. I will cook tasty and healthy soups ;) plus, I learned how to "braid" the onions, with my mom's help mãe :) Nice decoration!!
