Jantar de Natal com amigas *Pikkujoulu with friends*

*Scroll down for English version*

Vou experimentar tudo!!!

E o jantar foi aqui. Surpreendeu-me pela positiva.

Pikkujoulu dinner was on the 19th of November, with the girls!! This year we had a new addition, and we have to remember next time when someone new arrives to the group, we have to explain the rules! But it was fun, a lot! Like always :)

Among other fantastic gifts, there was some belgian chocolate, organic and fairtrade and a book I loved!! I had entered a giveaway, but didn't win it and I was thinking already to add it to the whislist, but someone was faster :)
I imagine myself already spending hours in the kitchen cooking all the good stuff. I will try everything!!!

And dinner was here. It surprised in a positive way. I knew the concept of "food-per-weight" restaurants already and I love it, but what surprised me was the variety and quality/flavour of the food (I cannot say that here exist many restaurants with good food :/)

And today I fly to Portugal, in a couple of hours! Garbage in the bin, washed dishes and freezer off! Helsinki, see you next year!!

Re-utilizar a receita da espécie-de-cheesecake para participar num passatempo de natal *Re-using kind-of-cheesecake recipe to participate in a x-mas giveaway*

 *Scroll down for English version*

Massa

150 gr de Manteiga
200 gr de All Bran flakes integrais
50 gr flocos de aveia integrais

Mousse/Recheio-de-cheesecake de manga (vegan)
Ingredientes

Decorar a gosto.

So what happened to the kindo-of-mango-cheesecake? It was great!!! Anyway, while I was doing it, it was too much and a bit of cream was left-over at my place and since it resembled more mousse than cheesecake texture, I sent the recipe and decided to participate in this giveaway. X-mas was the theme and I managed to find here a x-mas pendent with santa claus :) Meanwhile, the cheesecake and mousse are over already :p

The recipe is super easy and the base was made in Bimby, but you can do it in a blender easily:

Base

150 gr of vegetable butter
200 gr of whole-wheat All Bran flakes
50 gr whole-wheat oats

Mango mousse/Filling (vegan)
Ingredients
1 package of soya cream (to whip)
1 big mango, pureed (I used about 700 gr)
1 can of soya condensed milk
1 tsp of ágar-ágar powder
6 tsp of water
mango or chocolate to garnish
Instructions
- Put the mango in the blender until you have a smooth cream.

- Whip creams until firm with peaks.
- In a small pan, let the ágar-ágar and water boil for 5 minutes, in low heat, always mixing. Ver fast add the mango and the creams.
- Divide and put in the fridge for a couple of hours. Garnish.

Comida "esquecida" *Food "forgotten"*

*Scroll down for English*

Since I had to cook all the frozen food, my food in the fridge was put on hold... "forgotten"! And today was the final day, the food couldn't stay there any longer without being cooked and freezing it was not an option :) So I steamed it, I had 1/2 cabbage, 1 beetroot, 2 carrots, 1 broccoli and 1 cauliflower. This how it looked liked!

For dinner I will do an avocado-yogurt-chickpea paste and eat with bread and all the steamed vegetables with a drizzle of olive oil as a side dish!

Meanwhile, yesterday I noticed that I still had 1 kg of potatoes, so it was mashed potatoes (with carrots) for dinner! It was very tasty!!

The rush is that I will be traveling this Saturday to my home country and only return to Finland on mid-January. I have to have an empty fridge by then and leave it unplugged! :)

And I still don't know what to do with the onions... maybe tomorrow the inspiration will come!!

Maçãs no chão *Apples on the ground*

*Scroll down for English*

Well, no post yesterday, but happened something funny ;)

Started when I got home from work, the day before I had done this kind-of-mango-cheesecake (and I say kind-of because I did not use cream cheese, so it ended up being more like a mousse instead, but the taste was not bad at all!), to take for a snack at a friend's house!

When we were returning home, we came across an apple tree (which I haven't noticed it was there before and it was full of apple) and there were tons of apples scattered all over the ground. So here in Finland is not very common to see people picking up things from the ground, but it was dark and rain-ish and what the hell, I didn't care!! I picked one up to try it out! It had a "weird" look, but I took it home, washed it and it tasted good! Kind of sour and fresh... I felt like going back to the place and pick up some more apples!!! :D

And regarding the food, (obviously!) I still have leftovers, the pea soup is gone, I am now eating the cabbage (Caldo Verde) soup, one of the lasagnas also finished and we have left more or less half of the rice, still. ;)

To sum up, I still haven't need the freezer and I don't even remember it's broke.

Receita de cupcake "bebâdo" e concursos *"Drunk" Cupcake recipe and giveaways*

*Scroll down for English*

O nome do passatempo é "A tua receita não me é estranha" e aqui vai a dita:

Para 12 cupcakes

Ingredientes

Numa caçarola pequena juntar a água e o açúcar e deixar ferver.

I like giveaways! And cupcakes!! And today I decided to share a cupcake recipe I did for one of the many different Sangria party's editions hosted by a friend of mine. At the same time, I am entering this blog giveaway. :D Plus, the prizes include cooking books that I still don't have, which is handy, specially to me that I believe is never to much to own another book!

The name of the giveaway is "Your recipe is familiar" and here it is:

For 12 cupcakes

Ingredients

- for the cupcakes:
1 1/2 cup of all-purpose flour
1 Tablespoon of baking powder
1 cup of light brown sugar
1 pinch of salt
2 teaspoons of vanilla powder
2 Tablespoons of vegetable oil
1 Tablespoon of white wine vinegar (or apple cider)
1 cup of water

- for the frosting:
3 cups of red wine
1 soya yogurt
1/2 cup of vegetable margarine
4 cups of powder sugar
1/4 cup of soya milk
2 teaspoons of vanilla powder

- for the apple garnish
1 cup of water
1 cup of light brown sugar
2 apples
juice from 1 lime

Preparation

- cupcakes:
Pre-heat the oven at 180º C. Prepare 12 paper liner cupcakes or non-stick molds. In a big bowl, sift flour, salt and baking powder. Add the sugar and blend. Add the remaining ingredients and mix well together until you have a homogeneous mixture. Fill each cupcake about 2/3 of dough and bake, approximately 20 minutes, until fluffy and slightly golden. Cool down in a wire rack.

- frosting
In a pan at medium-high heat, bring the red wine to a boil and let it reduce until about a cup, until it looks like syrup. Cool down in the fridge. Meanwhile, in a big bowl combine the yogurt and margarine and mix at high speed until homogeneous. Lower down to minimum speed and add slowly the sugar and vanilla powder and at the end the soya milk. Scrap down the leftovers from the walls of the bowl and mix at high speed for about 10 minutes (or more). After cooled down, add the wine and blend well together. With a pipping bag, frost each cupcake and add the garnish.

- guarnish
In a small pan add the water and sugar and bring to a boil. Lower the heat and wait until all the sugar is dissolved into the water and looking like syrup. Pre-heat the oven at 90º C. Cut the apple in large and thin slices. Brush each side with the syrup and add a bit of lime juice (in order to avoid the browning). Put the slices on a baking sheet and take them to the oven in a tray. After 1 hour, flip and leave for another 1 hour, until they look crispy.

And this is how it turned out

Explicações e sobremesa *Thoughts and dessert*

*Scroll down for English*

Nada fundamentalista.

Comi (novamente!) sobras. Mas decidi cozinhar qualquer coisa na mesma. Fiz as minhas primeiras "kale chips"!

***

Just a small thought... I am doing this blog out of a crazy idea of trying to live without a freezer in the 21st century, not out of need, but because I want to. Not any special fundamentalist reason. It will be fun, just that! Plus, I am not trying to change anyone's to become vegan. I am not a "true" vegan, in the sense that I am changing my diet because I just feel better, health related, I want to reduce animal protein intake as much as possible, I love animals, I am against animal testing and animal cruelty, but I am not an extremist. Also, I love cooking and I would like to have my own cafe place one day, so the feedback is more than welcome ;)

Anyway, thinking out a bit about our beautiful planet current situation, with all the climate changes, for instance, I try to do my part not to make it worst. Maybe I will not be able to save the world, but I will try. So, recycling, buying local, no waste, ...., are all things I do normally, but now living in Finland I realize that there are certain things (like buying local products) that are not so easy any more.

Now, talking about today's cooking! I had (again!) leftovers. But I decided to cook something. I did my first kale chips! They are sooooo easy to do and they taste nice (A bit salty this time, but just needs tuning).

I also baked, but I am going to a party and I just need to take food!!! :) So I did some apple-pear crumble, since I had so many fruit at my house. I add a pinch of cinnamon and it smells wonderful!! I hope the taste is also good!

Dia 2 *Day 2*

*Scroll down for English*

Decidi fazer o blog bilingue.

I decided it to be a bilingual blog. Just because!!

So, yesterday was the second day of this crazy idea of living without a freezer and still with food that needs to be cooked or arranged somehow. Breakfast started trying to have local cereals (but it revealed itself to be a very complicated task, since most of the cereals are imported). Yesterday I went to the supermarket and looked at more than 20 different muesli and oats cereal brands, which were: 1st point - produced locally; 2 - organic; 3 - preferably whole wheat and 4 - without sugar (as much as possible)... I ended up buying this:

Fits perfectly in the second point, I really did not quite get if it was produced locally or if it was just the distributor who was local, partially whole wheat (as far as I understood, 18 %) and it has twice the sugar as I wanted to, but it was my first try. I just hope it improves :) I had soya milk, from Alpro and the manufacturing process is well explained here. The soya beans are no-GMO, sustainable, organic and with a low carbon foot-print. Plus, some whole wheat rye bread, tomato and cucumber, local (double the price of the imported ones, which is another issue but I will not discuss it now).

Anyway, I was happy with my breakfast and now I just need to find suitable cereals and it gets perfect!

No need to say that for lunch was a mix of the previous cooked dishes:
  • pea soup

    • vegetable lasagna and tomato rice (the pictures show the two lasagna dishes)
And the noodles I had yesterday for dinner :)

Still, I had to cook a bit more today. I did berries jam, which can be preserved longer in glass jars and are great mixed with yogurt or on top of a chocolate cake.
I add light brown sugar (fairtrade) to the fruit and a glass of Port wine, sustainable production and the producer (I found it out!) is part of a network of countries producers of wine, which support pollination, among other things --> check more info here! The bottle came with me from Portugal, so it contributed already for the carbon footprint...

And now I have so much cooked food, that the only thing I need to do is eat! I still haven't missed the freezer :)

Thursday 20 November 2014

New start!!

So it is today, 20th November, 2014, in the 21st century, that I will start my new blog about how to survive (at least) 365 days without a freezer!

It sounds silly, right?! Why would I want to live without a freezer? It is such a convenient thing, specially when you overcook and store the leftovers there or when you plan ahead the week's meal and freeze a bunch of meals in zip-lock bags or even you just want to eat some ice-cream! So it does not really make sense that one would want to undergo this crazy experience of living without a freezer?!! Anyways, the thing is that 2 days ago my freezer just "exploded" and does not work anymore... So it was (and still is) a bit of a chaotic situation in my kitchen, all the food was melting, water in the floor, what to do with it? Very stressful day!! So I spent yesterday afternoon cooking 2 different soups (already with 2 in the fridge), cooking 2 trays of lasagna, 1big bowl of seafood rice, 2 types of stir-fry noodles and I did not have time to make a casserole, so that one is for today :)

Plus, I will try to survive not only without freezer, but also buying organic, sustainable, fair trade and local food and cooking my vegan experiments!

Another thing, I am hopefully thinking that this new situation will help me balance the cooking for 1-2 persons, instead of cooking one meal that lasts the whole week :)
